Late Summer Stock

Starting to get hints of early fall flavors in the stock pot this week.Yay! I adore fall flavors, and have been looking forward to them.

Beef bones

The usual (carrots, celery, onion, garlic)

Green pepper tops
Sweet potato peels
Corn cobs
Spinach stems
Tomato tops
Used lemon halves
Zucchini ends

I've added a new ingredient to my stock portions; coffee. I've been freezing it like mad and I must say, added to beef stew or used in a sauce or a marinade, it simply works wonders!!! Oh how I wish I would have considered this sooner. But, that's just me:)

I too love fall for all it offers to the stock pot and the compost:)
